SUMMER HERB SALAD WITH DUKKA
- 1 bunch parsely
- 1 bunch dill
- 1 bunch mint (leaves individually removed)
- 1 bunch finely sliced breakfast radishes
- 1 lemon
- Olive oil
- Dukkan's Egyptian Dukka
- Any microgreens, other herbs or or bean sprouts
Finely chop all herbs and add to a large bowl. Add the picked mint leaves whole, and the sliced radishes. If you have any other microgreens, herbs or sprouts you would like to add, be creative! We used mung bean sprouts and micro arugula.
Add the juice of 1 lemon, about 1/4 cup of olive oil (to taste) and a pinch of salt. Add a tablespoon (or more!) of Dukka.
Toss salad and enjoy fresh!
