SUMMER HERB SALAD WITH DUKKA

This is one of our favorite salads to make in the summer with whatever herbs we find lying around. Parsely and dill make an excellent base you can layer with a variety of herbs. You really can't go wrong here - use whatever you have, and bring it all together with Dukka. Fresh, punchy and full of flavor, it is an excellent addition to any meal.

INGREDIENTS

  • 1 bunch parsely
  • 1 bunch dill
  • 1 bunch mint (leaves individually removed)
  • 1 bunch finely sliced breakfast radishes
  • 1 lemon
  • Olive oil
  • Salt
  • Dukkan's Egyptian Dukka
  • Any microgreens, other herbs or or bean sprouts

       

      Step 1:

      Finely chop all herbs and add to a large bowl. Add the picked mint leaves whole, and the sliced radishes. If you have any other microgreens, herbs or sprouts you would like to add, be creative! We used mung bean sprouts and micro arugula.

       

      Step 2:

      Add the juice of 1 lemon, about 1/4 cup of olive oil (to taste) and a pinch of salt. Add a tablespoon (or more!) of Dukka.

       

      Step 3:

      Toss salad and enjoy fresh!
