Quick Baharat Fridge Pickles

If you’ve never made your own pickles, give these quick fridge pickles a try. You can use this trick to get creative without the full process of canning and lacto-fermentation, which makes this a great and easy way to start experimenting. Bring these to your next picnic and watch them disappear.
Baharat goes perfectly with the sour kick of these pickled cucumber bites - what else would you add to yours?

INGREDIENTS

 

  • 1 pack small Persian cucumbers
  • 1 jalapeño
  • 3 scallions
  • 2 cloves garlic
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 tbsp sea salt
  • 2-3 tsp Dukkan Baharat spice

 

Step 1:

Thinly slice your cucumbers, jalapeno, garlic and scallions and put in a clean jar.

 

Step 2:

In a separate container, mix a 1:1 ratio of vinegar to water. Add the salt and baharat. Stir well.

 

Step 3:

Pour liquid over the jar of vegetables and make sure liquid covers the top layer of vegetables.

 

Step 4:

Leave in fridge for 24-48 hours and enjoy as a snack, in salads, or alongside any meals. This will keep in the fridge for at least 2 weeks!
