Mexican Sopa de Fideos with Baharat

Need something simple and straightforward that will warm your winter blues? Sopa de Fideos, a classic Mexican soup is just the thing.
This soup is made with a tomato, onion and garlic broth base, with tiny noodles (”fideos”) which are similar to vermicelli. Folks may add more herbs, peppers, or spices to it- of course we thought a little  baharat would be appropriate.

INGREDIENTS

 

3 tomatoes

1 yellow onion 

3 cloves garlic

1 tsp baharat

1 packet of fideos (or vermicelli)

1.5 cups water (to taste)

A pinch of salt, to taste

 

 



 

Step 1:

Boil your whole tomatoes, quartered onions and garlic cloves in water. In about 10 minutes, when the tomato skins start breaking, remove the vegetables from the water and add them to a blender. Blend until smooth.

 

Step 2:

Using a fine strainer, strain the tomato liquid, removing all the fibrous and chunky pieces. The liquid below should be smooth.

 

Step 3:

Add a couple of tablespoons of olive oil to a medium pot on medium-hot. Add your fideos (or vermicelli) and stir until lightly browned. Once they begin to slightly shift in color, add your tomato water. Add 2 tsp of baharat to taste.

 

Step 4:

Allow the noodles to cook for about 8 minutes, adding 1-1.5 cups of water to adjust the thickness of the soup to your preference. Serve hot and enjoy!
