Our recipe for Lemon Grilled Chicken with Veggies can help you in a pinch any night of the week. Basic vegetables, a whole chicken and our Dukkan Chicken Shawermah Spice are the main go-to ingredients for you to use. Whether feeding a family of 8 or a family of 2, marinating vegetables with a protein and then baking it all in one go is enough to create a healthy dinner option for those nights when you smartly fight the urge to order take-in.

You can even make this recipe for an impromptu dinner party, just roughly calculate one whole regular sized chicken per four persons. If working from home, you can prepare this an hour before you plan on sending your last email so that it is ready and hot as you finish your work day. If there are any leftovers, remove any chicken meat from the bones and store in tupperware in the fridge. It should keep for about three days for any lunches on the go.

INGREDIENTS

 

1 regular sized chicken

5 tablespoons chicken shawarma spice 

Juice of 6 large lemons 

Olive oil 

6 shallots, sliced 

3 cups sliced carrots

4 cups sliced zucchini

3 cups brocolli 

Pinch of salt 

½  stick butter



 

Step 1:

Turn your oven so that it starts to heat on a medium heat, about 375 degrees fahrenheit. 

Melt the butter either on the stovetop or in your microwave in a microwave safe bowl. 

 

Step 2:

Add 4 tablespoons of shawarma spice, lemon juice and a pinch of salt to the butter and mix. 

 

Step 3:

Pour this onto your chicken and try to rub a bit under the skin so that it serves as a quick marinade. 

 

Step 4:

Toss your sliced and prepped veggies with a good drizzle of olive oil, 1 tablespoon of chicken shawarma spice and a pinch of salt. 

 

Step 5:

Pop your chicken onto a baking tray and place your vegetables around the chicken, then pop into the oven. 

It should take about 40 minutes for your chicken to cook thoroughly. Make sure it’s been cooked through before serving.
