BAHARAT SPICED ROASTED BROCCOLI SOUP
1 hour 15 minutes (most of that is roasting!)
- 4 heads broccoli
- 1 onion, diced
- 3 cloves garlic, minced
- Dukkan Baharat
- Olive oil
Preheat your oven to 400ºF. Separate your broccoli into florets and coat generously with olive oil and a pinch of salt. Roast your broccoli for 30-40 minutes until they are perfectly tender, tossing them halfway through.
On medium-low heat, add onion and garlic to a pot with a generous 1/4 cup of olive oil. Add a pinch of salt, Baharat and mix them in. Sauté until onions are lightly browned.
Add your pre-roasted broccoli, top with hot water, and blend your soup with an immersion blender. Add more water and keep blending until the texture is to your liking (If you are not roasting your broccoli, you can add these elements and simmer on low until broccoli is fork tender, then blend).
Serve up and enjoy!
